White chocolate and dried apricot cookies
whisk 1 egg
with 50 g sugar
and 125 g butter
mix with
75 g fresh grounded spelt
and 175 g fine spelt or wheatflour
then gently fold in
100 g white chocolate-bits
and
100 g (finely) chopped dried apricots
put some baking paper on a baking tray
and arrange the dough.
bake for 12 minutes at 175° C
